We went cherry picking on Sunday. Last night, I was thinking those dark black cherries would be perfect with chocolate. Chocolate cake with cherries and chocolate syrup was what crept in my mind.
Since I’ve been experimenting with cake mix, it seemed only a natural progression to move to chocolate cake. Using Treats and Trinkets Chocolate Cake Mix, I created a chocolate cake mix. I added a can of seltzer, then baked in two round pans for 20 minutes. Out came a great cake.
While the cake was baking, I pitted about 2 cups of black cherries and cooked them over the stove with 1 cup of sugar.
Once finished, I served with homemade chocolate syrup. The end result was a homemade cake that not only tastes amazing but makes me feel great. It’s all homemade, natural and awesome.
Sara’s DIY Chocolate Cake Mix
2 cups flour
1 1/2 cup sugar
9 TB cocoa powder
1 1/2 teas baking powder
1/2 teas baking soda
1/2 cup coconut oil (or butter or other fat)
1 tsp vanilla
1 can seltzer water
Mix dry ingredients in a bowl. Blend in fat and vanilla. Beat in seltzer until just blended. Pour into oiled pan. Bake at 350 for 20 – 35 minutes.
I used two 9 inch rounds and it took about 22 minutes to bake.
Homemade Chocolate Syrup
1/4 cup water
1/2 cup sugar
1/4 cup cocoa powder
Bring water to a boil. Add sugar and cocoa powder. Turn off heat and stir until everything is smooth. Remove from heat and pour into glass jar. Beware that it takes just a minute to make the syrup too thick.
I did have success doubling this recipe but none when I increased it more.
